Cook fries
Preheat oven to 425°F (220°C) if baking, or preheat air fryer to 400°F (200°C). Spread 4 cups of frozen fries in a single layer on a rimmed baking sheet lined with parchment (for oven) or place in the air-fryer basket. If shallow frying, heat 1–2 inches of vegetable oil to 350°F (175°C) in a heavy skillet. Toss fries with 2 tbs oil, 1/2 tsp salt, and 1/4 tsp pepper to coat lightly. For oven: roast 18–22 minutes, flipping once halfway, until crisp and golden. For air fryer: cook 10–14 minutes, shaking basket halfway. For shallow-fry: fry in batches 3–4 minutes until crisp, drain on paper towels and season immediately with salt and pepper.
Keep fries warm on a baking sheet in a low oven (200°F / 95°C) while you make the cheese sauce.
Cheese Sauce
Make a roux
In a medium saucepan set over medium heat, melt 2 tbs unsalted butter. Add 2 tbs all-purpose flour and whisk continuously for 1 to 1½ minutes until the mixture is bubbly and smells slightly toasty but not brown.
Add milk
Slowly pour in 1 cup whole milk while whisking to prevent lumps. Continue to cook, whisking frequently, until the mixture thickens and begins to simmer, about 3–5 minutes.
Finish sauce
Reduce heat to low. Remove pan from direct heat and stir in 1 cup grated sharp cheddar and 1/2 cup American cheese (if using) a handful at a time until smooth. Add 1/2 tsp Dijon mustard, 1/4 tsp Worcestershire sauce, 1/4 tsp salt, 1/8 tsp pepper, and 1/4 tsp hot sauce if using. Taste and adjust seasoning. Keep sauce warm over the lowest heat, stirring occasionally; do not let it boil.
Assembly & Toppings
Place the warm fries in a shallow serving container or small tray (this recipe yields a small-sized serving for 1–2 people).
Ladle the warm cheese sauce evenly over the fries, using as much as desired to coat but leaving some fries visible for texture.
Sprinkle 2 tbs chopped scallions, 2 tbs crispy bacon bits, and 1 tbs sliced pickled jalapeños over the sauced fries. Finish with a light dusting of freshly ground black pepper (about 1/8 tsp).
