Alligator and Marinade
Trim the alligator tail meat of any silver skin or large connective tissue. Cut into 1/2- to 3/4-inch thick strips or bite-sized pieces, aiming for uniform size so pieces cook evenly.
In a nonreactive bowl combine buttermilk, hot sauce, 1 tsp kosher salt, and 1/2 tsp freshly ground black pepper. Add the alligator pieces, press them into the marinade so they’re submerged, cover and refrigerate for 2–4 hours (or up to overnight for more tenderizing).
Breading
While the meat marinates, whisk together flour, cornmeal, paprika, garlic powder, onion powder, cayenne, dried thyme, 1/2 tsp black pepper, and 1 tsp kosher salt in a wide shallow bowl or on a rimmed baking sheet. This will be the dry dredge.
Set up a three-step breading station: marinade-coated alligator (in bowl), egg wash, and the seasoned flour-cornmeal mixture. For the egg wash, beat the 2 large eggs with 1/4 cup whole milk until smooth in a shallow dish.
Frying
Pour about 1 cup neutral oil into a heavy skillet or cast-iron pan (enough to come about 1/3-inch to 1/2-inch up the side). Heat over medium-high until oil registers 350°F (175°C) on a thermometer or a pinch of bread crumbs sizzles and browns in about 10–15 seconds.
Working in batches (do not overcrowd), remove a few pieces of alligator from the buttermilk, let excess drip, dip into the egg wash, then dredge thoroughly in the seasoned flour-cornmeal mixture, pressing to adhere. Shake off excess.
Carefully lower the pieces into the hot oil and fry until golden brown and cooked through, about 3–4 minutes per side for 1/2–3/4-inch pieces (internal temperature should reach 145°F / 63°C). Adjust time for larger pieces. Use a slotted spatula or tongs to flip once.
Transfer cooked pieces to a wire rack set over a rimmed baking sheet and tent loosely with foil to keep warm. Sprinkle with a light pinch of the extra 1/4 tsp kosher salt while hot. Repeat with remaining pieces, allowing the oil to return to temperature between batches.
Finish and Serve
Once all batches are cooked, transfer the fried alligator to a serving platter. Sprinkle with chopped parsley and arrange lemon wedges alongside.
Serve immediately with Creole or remoulade sauce for dipping and lemon wedges to squeeze over. Recommend serving with fries, coleslaw, or a simple green salad.
