Make the roux
In a medium saucepan or small Dutch oven set over medium-low heat, combine butter and vegetable oil. When butter is melted and shimmering, sprinkle in the flour. Stir constantly with a wooden spoon or heatproof spatula, scraping the bottom, until the mixture turns a deep peanut-butter brown (about 12–18 minutes). Adjust heat to prevent burning; if it darkens too quickly, lower the heat. Remove from heat briefly if necessary.
Proteins
If using raw chicken thighs: in a separate skillet over medium-high heat, quickly brown the chicken pieces in 1 teaspoon oil to develop color, 3–4 minutes, then add to the pot. If using pre-cooked or shredded chicken, add it to the pot after the vegetables have softened. Add sliced andouille sausage to the pot and stir to coat in the roux-vegetable mixture; let the sausage brown slightly in the mixture for 1–2 minutes to release flavor.
Broth & Seasoning
Slowly stir in the chicken stock a little at a time to the roux mixture, whisking or stirring vigorously to prevent lumps. Add the diced tomatoes (if using), Worcestershire sauce, Creole seasoning, smoked paprika, dried thyme, bay leaf, black pepper, and salt. Return to a gentle simmer.
Reduce heat to low and simmer, partially covered, for 20–30 minutes to meld flavors and thicken slightly. Stir occasionally and skim any excessive fat or foam. If the gumbo becomes too thick, add up to 1/2 cup extra warm stock or water to reach desired consistency.
Taste and adjust seasoning. If using file powder, stir 1/4 teaspoon into the gumbo in the last 2 minutes of cooking (or sprinkle a pinch per bowl at serving). Remove and discard bay leaf before serving.
Finishing & Serving
To serve one cup portion: place 1/2 cup hot cooked white rice into a shallow cup or bowl. Ladle approximately 1 cup of gumbo over the rice (aim to yield the combined portion size). Garnish with chopped green onions and parsley. Offer extra file powder and hot sauce at the table.
Estimated yield: recipe quantities are scaled to produce roughly one cup (single serving) of gumbo with rice. If you prefer more protein or thicker gumbo, adjust quantities and simmer time accordingly.
