Marinate the alligator

Combine buttermilk, 1/4 cup hot sauce, Worcestershire, garlic powder, onion powder, smoked paprika, 1 tsp kosher salt and 1/2 tsp black pepper in a bowl. Add the cut alligator pieces, stir to coat, cover and refrigerate at least 2 hours or up to overnight. The buttermilk tenderizes and infuses heat.

Prep the coating and oil

In a shallow dish whisk together flour, cornstarch, baking powder, cayenne, paprika and 3/4 tsp salt. Pour vegetable oil into a large skillet to reach about 1/4"–1/2" depth and heat over medium-high until it registers 350°F (175°C) on a thermometer or a small drop of batter sizzles and browns in ~20 seconds.

Dredge and fry the gator

Remove alligator from marinade and shake off excess buttermilk. Dredge pieces in the flour mixture, pressing lightly to adhere. Fry in batches without overcrowding, about 2–3 minutes per side, until golden-brown and internal temperature reaches 145°F (63°C). Transfer to a paper towel-lined tray to drain. Keep warm in a 200°F (95°C) oven while finishing remaining pieces.

Make the buffalo sauce

Melt the 3 tablespoons butter in a small saucepan over low heat. Whisk in 1/2 cup hot sauce, honey and apple cider vinegar until smooth and slightly thickened, 1–2 minutes. Season with a pinch (1/4 tsp) salt. Remove from heat.

Toss fried gator in sauce

Place the drained fried alligator pieces into a large bowl. Pour the warm buffalo sauce over them and toss gently to coat evenly. Taste and add a little more hot sauce or honey if you prefer spicier or sweeter.

Slaw & Toppings

Make the quick slaw

In a bowl combine green and red cabbage, carrot, lime juice, mayonnaise, chopped cilantro, 1/2 tsp salt and 1/4 tsp black pepper. Toss until evenly coated. Fold in pickled jalapeños if using.

Prepare optional toppings

Crumble blue cheese or prepare a ranch drizzle. Warm tortillas briefly on a dry skillet or wrapped in foil in a 300°F oven for 5–8 minutes. Keep limes and green onions ready for garnish.

Assembly

To assemble each taco: warm a tortilla, place a small handful (about 3–4 oz) of buffalo-coated fried alligator in the center, top with a generous spoonful of slaw, sprinkle with green onions and blue cheese (if using), and finish with a squeeze of lime. Serve immediately while hot and crispy.

Notes & Food Safety

Ensure alligator reaches 145°F internal temperature. If using previously frozen meat, thaw completely in the refrigerator before marinating. Leftover buffalo-coated gator can be reheated in a 375°F oven for 8–10 minutes to regain crispness; sauce may be refreshed with a tablespoon of melted butter.
