Roasted Broccoli
Preheat and prepare
Preheat the oven to 425°F (220°C). Line a rimmed baking sheet with foil or parchment for easy cleanup. If broccoli is not prepped, cut a 1 lb head of broccoli into bite-size florets, keeping some stem trimmed and peeled into 1/4-inch pieces so nothing goes to waste.
Toss with oil and seasonings
Place the florets in a large bowl. Add 2 tbsp extra-virgin olive oil, 1 tsp sea salt, 1 tsp freshly ground black pepper, and toss well to coat every piece evenly. Spread the broccoli in a single layer on the prepared baking sheet, leaving small gaps so edges crisp rather than steam.
Roast
Roast in the preheated oven for 14–18 minutes, stirring or flipping once about halfway through. Roast until the florets develop deep green color with some browned, slightly charred edges and stems are just tender when pierced with a fork.
Finish with lemon and cheese
Remove the baking sheet from the oven. While still hot, sprinkle 1 tsp lemon zest and drizzle 1 tbsp fresh lemon juice over the broccoli. If using, sprinkle 2 tbsp grated Parmesan and return to the oven for 1 minute to melt slightly (optional).
Garnish & Serve
Transfer the broccoli to a serving plate. Scatter 2 tbsp toasted pine nuts or slivered almonds over the top and sprinkle 1/4 tsp red pepper flakes if desired. Adjust seasoning to taste and serve warm as a starter.
