Prepare the Ingredients

Dice the bell pepper, onion, and celery. Mince the garlic. Set aside.

Cook the Sausage

In a large pot, heat 2 tablespoons of olive oil over medium heat. Add the sliced Andouille sausage and cook until browned, about 5 minutes.

Brown the Chicken

Add the chicken thighs to the pot and cook until browned on both sides, about 4-5 minutes per side.

Add the Vegetables

Stir in the diced bell pepper, onion, celery, and minced garlic. Cook until the vegetables are soft, about 5-7 minutes.

Simmering

Add the Remaining Ingredients

Pour in the chicken broth and add the canned diced tomatoes, Cajun seasoning, bay leaves, salt, and black pepper. Stir well.

Incorporate Shrimp and Crawfish

If using, add the shrimp and crawfish to the pot. Bring the mixture to a boil.

Reduce Heat and Simmer

Reduce the heat to low, cover the pot, and let it simmer for 30 minutes, stirring occasionally.

Remove Bay Leaves

After 30 minutes, remove the bay leaves from the pot and discard them.

Ladle the Zydeco into bowls over a serving of cooked white rice. Garnish with sliced green onions.
