Preparation of Rice and Meat Mixture

Cook the Rice

In a medium pot, bring 2 cups of water to a boil. Add the basmati rice, stir, cover, and reduce heat to low. Cook for 15-20 minutes until the rice is tender and water is absorbed. Let it cool.

Cook the Meat

In a large skillet over medium heat, add the ground pork shoulder and ground chicken liver. Cook until browned, about 8-10 minutes, breaking it apart with a spoon.

Sauté Vegetables

Add the chopped onion and minced garlic to the skillet with the meat. Sauté for an additional 5 minutes until the onion is translucent.

Mix Ingredients

In a large bowl, combine the cooked rice, sautéed meat and vegetable mixture, shredded pepper jack cheese, chopped green onions, Cajun seasoning, salt, and black pepper. Mix well until all ingredients are combined.

Prepare Casings

Soak the pork casings in cold water for at least 30 minutes. Rinse them under running water to remove excess salt.

Stuff the Casings

Using a sausage stuffer or a funnel, carefully fill the casings with the rice and meat mixture. Twist into 6-inch links and tie off the ends securely.

Cook the Boudin

In a large pot, bring 4 cups of water to a simmer. Add the stuffed boudin links and cook for 20-30 minutes until cooked through and firm to the touch.

Cool and Serve

Remove the boudin from the pot and let it cool slightly before serving. Slice and enjoy with your favorite dipping sauces.
