Cooking the Egg and Bacon

Cook the Bacon

In a skillet over medium heat, add the bacon slices and cook until crispy, about 5-7 minutes. Flip the bacon occasionally to ensure even cooking. Once done, transfer the bacon to a paper towel-lined plate to drain excess grease.

Fry the Egg

In the same skillet, using the bacon fat, crack the eggs into the skillet. Cook until the whites are set but the yolks are still runny, about 3-4 minutes. If you prefer your yolks cooked through, flip the eggs gently and cook for an additional minute.

Assembling the Sandwich

Prepare the Bun

Slice the brioche bun in half and toast it lightly on a pan or toaster until golden brown.

Add Condiments and Veggies

Spread mayonnaise on the bottom half of the toasted bun. Layer with a leaf of lettuce, followed by slices of tomato, red onion, and pickles.

Layer the Protein

Place the crispy bacon on top of the vegetables, followed by the sunny-side-up egg. Top the egg with a slice of American cheese, allowing it to melt slightly from the heat of the egg.

Cover with the top half of the bun, pressing down gently to secure the contents.

Cook the waffle fries according to package instructions, either by baking or frying until crispy and golden. Season with salt to taste.
