Marinate the Alligator

In a large bowl, combine buttermilk and hot sauce. Add the alligator meat and ensure it's fully submerged. Cover and refrigerate for at least 2 hours, preferably overnight to allow flavors to meld.

Prepare the Breading Mixture

In a separate large bowl, mix together the all-purpose flour, cornmeal, Cajun seasoning, salt, and black pepper until well combined. Set aside.

Heat the Oil

In a large, deep skillet or Dutch oven, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can use a deep-fry thermometer to check the temperature.

Bread the Alligator

Remove the alligator meat from the buttermilk marinade, allowing excess liquid to drip off. Dredge each piece in the breading mixture, ensuring it is fully coated. Shake off any excess flour mixture.

Fry the Alligator

Carefully add the coated alligator pieces to the hot oil in small batches, being careful not to overcrowd the pan. Fry for about 4-5 minutes or until golden brown and cooked through, turning occasionally for even browning.

Using a slotted spoon, remove the fried alligator from the oil and place them on a plate lined with paper towels to drain excess oil. Serve hot with your favorite dipping sauce.
