Bake fries
Preheat oven to 425°F (220°C). Place frozen waffle fries in a single layer on a rimmed baking sheet lined with parchment or a silicone mat. Toss with 2 tablespoons vegetable oil and 1 teaspoon salt to coat evenly.

Bake for 18–22 minutes, turning once halfway through, until fries are golden-brown and crisp. For extra crispness, finish with 1–2 minutes under the broiler while watching closely. Remove from oven and keep warm.
Cheese Sauce

Make a roux
In a small saucepan over medium heat, melt 1 tablespoon unsalted butter. When melted and foamy, add 1 tablespoon all-purpose flour and whisk continuously for 60–90 seconds until the mixture is bubbly and lightly golden (this cooks out the raw flour taste).

Add milk
Gradually whisk in 3 ounces (about 90 ml) whole milk in two additions, whisking constantly to prevent lumps. Bring the mixture to a gentle simmer while whisking until it thickens, about 1–2 minutes.

Finish cheese sauce
Lower heat to low. Stir in 3 ounces shredded sharp cheddar, 0.5 ounce cream cheese, 0.5 teaspoon yellow mustard, 0.25 teaspoon Worcestershire sauce, 0.125 teaspoon paprika, 0.125 teaspoon freshly ground black pepper and 0.25 teaspoon salt. Stir continuously until cheeses are fully melted and the sauce is smooth, about 1–2 minutes. If sauce is too thick, thin with up to 1 tablespoon milk. Keep warm on the lowest heat setting, stirring occasionally.

Transfer the hot waffle fries to a medium serving bowl or small platter, spreading them into an even layer so the sauce can coat evenly.

Pour the warm cheese sauce over the fries, using as much as desired to cover them (reserve a tablespoon or two if any diners prefer less sauce).

Scatter 1 tablespoon chopped cooked bacon (if using) over the sauced fries, then sprinkle 1 tablespoon thinly sliced scallions and 2 tablespoons diced tomatoes. Add pickled jalapeños to taste (about 1 teaspoon for a little heat).
