    Preheat and prepare: If deep-frying, heat oil in a deep fryer or large heavy pot to 350°F (175°C). If using the oven, preheat oven to 425°F (220°C) and place a rack in the middle position; line a baking sheet with parchment or foil.

    Cook fries: For deep-frying, add frozen fries in a single layer (work in batches) and fry 3–4 minutes until golden and crispy. Remove with a slotted spoon to a tray lined with paper towels. For oven method, spread fries in a single layer on the baking sheet, lightly spray or toss with 2–3 tablespoons oil, and bake 18–25 minutes, turning once halfway, until golden and crisp.

    Season fries: Immediately sprinkle fries with kosher salt (1 tsp) and black pepper (1/4 tsp) while hot and transfer to a large ovenproof platter or shallow baking dish for assembly.

Cheese Sauce

    Make a roux

    In a medium saucepan over medium heat, melt 2 tablespoons unsalted butter. When butter is foamy, add 2 tablespoons flour and whisk continuously for 1–2 minutes until the mixture cooks and turns a slightly golden paste (this removes the raw flour taste).

    Add milk

    Slowly pour in 1 cup whole milk while whisking constantly to avoid lumps. Continue to cook and whisk until the sauce thickens and just begins to simmer, about 3–5 minutes.

    Finish cheese sauce

    Reduce heat to low. Remove the saucepan from direct heat and add 1 1/2 cups shredded cheddar and 1/2 cup torn American cheese a handful at a time, stirring until fully melted and smooth. Return to very low heat if needed—do not boil. Stir in 1/2 tsp Dijon mustard, 1/4 tsp Worcestershire sauce, 1/4 tsp hot sauce (if using), 1/4 tsp salt and 1/8 tsp black pepper. Taste and adjust seasoning.

    Keep warm: Keep sauce warm over very low heat or in a small insulated container. If it thickens too much, whisk in 1–2 tablespoons warm milk to loosen before using.

Assembly & Garnish

    Assemble fries and sauce: Arrange the hot seasoned fries in an even layer in your serving dish. Pour the warm cheese sauce over the fries, using as much as desired to coat and puddle between fries (reserve some sauce if serving family-style).

    Add toppings: Immediately sprinkle 1/2 cup chopped crispy bacon over the sauced fries. Scatter 2 tablespoons thinly sliced scallions and 2 tablespoons pickled jalapeños (if using). Finish with 2 tablespoons crumbled queso fresco or cotija, if desired.
