Prepare Acid & Rennet

    Dissolve citric acid

    In a small bowl, dissolve 1.5 tsp citric acid in 60 ml cool water. Stir until fully dissolved and set aside.

    Dilute rennet

    In a separate small cup, dilute 0.5 tsp liquid rennet in 30 ml cool water. Mix gently and set aside.

Heat Milk & Add Acid

    Pour 2 liters of fresh whole milk into a wide, heavy-bottomed pot. Gently stir in the dissolved citric acid solution into the milk. Begin heating over medium heat, stirring occasionally to prevent scorching.

    Heat the milk to 32°C (90°F). Use an instant-read thermometer to monitor temperature. This acid addition will prime the milk to form curds more readily when rennet is added.

Add Rennet & Form Curds

    When milk reaches 32°C (90°F), remove the pot from heat. Pour in the diluted rennet and stir gently with an up-and-down motion for about 20–30 seconds to distribute evenly.

    Cover the pot and let it sit undisturbed for 30–40 minutes until a clean break forms (the curd is set and the whey is clearish). If the break is not clean, wait an additional 10–15 minutes and check again.

Cut, Cook & Drain Curds

    Using a long knife, cut the curd vertically into 1–1.5 cm cubes. Let rest for 5 minutes to allow curds to firm slightly and expel whey.

    Gently heat the curds to 38–40°C (100–105°F) over low heat, stirring slowly and occasionally for 10–15 minutes to encourage further whey expulsion. Do not break the curds aggressively.

    Once curds are firm and whey has separated, ladle or pour off the whey, leaving the curds in the pot or transfer curds to a large colander lined with cheesecloth and drain for 5–10 minutes. If using packaged cheese curds (450 g), you can warm them slightly in hot whey or hot water to prepare for stretching — see next section.

Stretching & Forming Logs

    Heat about 2 liters of water in a kettle or pot until it reaches 75–85°C (do not boil). Prepare an ice water bath (approximately 1000 ml cold water with ice) in a large bowl nearby.

    If using your own curds: cut the drained curd mass into manageable pieces and place a piece into a microwave-safe bowl. Microwave 20–30 seconds, drain off excess whey, fold and knead with a spoon or gloved hands, then microwave again 10–20 seconds until pliable. Alternatively, dip pieces into the hot water until they become shiny and stretchable (use a slotted spoon). If using store-bought cheese curds: place the curds briefly (10–30 seconds) in the hot water until they become soft and start to knit together.

    Once the curd is very hot and elastic, add 2 tsp salt (from the 2 tsp total) and any optional flavoring (oregano, pepper flakes) evenly, then begin stretching and folding. Pull the mass into a rope and fold back on itself several times; repeat until smooth and glossy — this aligns the proteins and creates the mozzarella texture.

    Forming logs: divide the stretched cheese into 6 equal portions (about 75 g each) and roll each portion between oiled hands or on a lightly oiled surface into 12–15 cm logs. Brush lightly with 1 tbs oil to prevent sticking and give a sheen.

    After forming, immediately dip logs into the ice water bath for 1–2 minutes to set shape and stop the cooking/stretching process. Transfer to a clean container and refrigerate for at least 1 hour to firm further.

Season & Store

    Taste one log and adjust additional salt if desired. Store finished mozzarella logs in a sealed container in the refrigerator for up to 5–7 days. For longer storage, pack in a light brine (1 tsp salt per cup / 240 ml water) and keep refrigerated.

    If you added herbs or pepper flakes, allow flavors to mellow in the fridge for several hours before serving.
