Prepare dates
Preheat your oven to 400°F (200°C). Line a baking sheet with foil and place a wire rack on top if you have one; this allows bacon fat to drip away. Pat the dates dry with paper towel.

Stuff dates
Using a small knife, make a lengthwise slit in each date and gently open it. Fill each date with about 1/2 teaspoon of goat cheese or a small crumble of blue cheese. If using nuts, push one toasted almond or pecan half into the cheese center so it sits snugly inside the date.

Wrap with bacon
Cut each bacon slice in half crosswise to yield 24 shorter strips. Wrap one bacon half around each stuffed date so the seam is on the bottom, securing with a toothpick. Arrange wrapped dates seam-side down on the prepared rack/baking sheet, leaving a little space between them.

Bake until crisp
Bake in the preheated oven for 18–22 minutes, rotating the pan once halfway through, until the bacon is crisp and browned to your liking. If you prefer extra-crispy bacon, broil 1–2 minutes at the end while watching closely to avoid burning.

Make glaze
While the dates bake, combine the balsamic vinegar, brown sugar, Dijon mustard, and freshly ground black pepper in a small saucepan. Bring to a gentle simmer over medium heat and cook 4–6 minutes, stirring occasionally, until the mixture thickens slightly and coats the back of a spoon. Remove from heat and let cool slightly; it will thicken a bit more as it cools.

Glaze the finished dates
When the bacon-wrapped dates are done, transfer them to a serving platter. Either brush the warm glaze over each date, or drizzle the glaze over the arranged dates. You can also return them to the oven for 1–2 minutes after glazing to set the glaze if desired.

Garnish and serve
Sprinkle the finely chopped parsley over the glazed dates for color if using. Serve warm or at room temperature. Provide extra toothpicks for guests. Estimated make-ahead: assemble and refrigerate up to 6 hours before baking; bake and glaze just before serving.
