Etouffée Base
Make a blond roux
In a heavy, wide skillet or Dutch oven over medium heat, melt 6 tbsp unsalted butter. When melted and hot but not browning, whisk in 6 tbsp all-purpose flour. Cook, whisking constantly, for 6–8 minutes until the roux turns a light nutty blond color and loses the raw flour smell. Reduce heat if the roux begins to darken too quickly.
Add the diced onion, green bell pepper, and celery (the holy trinity) to the roux. Stir and cook for 6–8 minutes until the vegetables are softened and translucent, stirring frequently to incorporate them into the roux.
Stir in the minced garlic and 1 tbsp tomato paste and cook for 1 minute more until fragrant. If using, pour in 1/2 cup dry white wine to deglaze the pan, scraping any browned bits and cook until the wine is reduced by half (about 2 minutes).
Slowly whisk in 3 cups low-sodium chicken stock, a ladle at a time at first to smooth the roux, then in one pour. Add 2 bay leaves. Bring the mixture to a gentle simmer and cook, stirring occasionally, for 10–12 minutes so it thickens to a slightly saucy consistency.
Seasoning & Finish
Season the simmering sauce with 1 tsp Worcestershire sauce, 1 tsp Cajun or Creole seasoning, 1/2 tsp smoked paprika, 2 tsp hot sauce, 1 tsp kosher salt, and 1/2 tsp freshly ground black pepper. Taste and adjust seasoning—add more Cajun seasoning or hot sauce to your heat preference.
Stir in 1 tsp file powder (or reserve to sprinkle at the end) and 2 tbsp chopped fresh parsley and 3 tbsp sliced green onions. Remove and discard bay leaves.
Crawfish & Serving
Gently fold in 1 lb crawfish tails and 1 tbsp unsalted butter into the simmering etouffée. Simmer gently for 3–4 minutes until crawfish are heated through and flavorful—avoid prolonged cooking to keep the tails tender.
Finish with 1 tbsp fresh lemon juice, stir, and check final seasoning. If you did not add file powder earlier, sprinkle it now and stir lightly (do not boil after adding filé).
Spoon the crawfish etouffée over cooked long-grain white rice (about 1 cup rice per serving). Garnish with additional chopped parsley and sliced green onions. Serve immediately with hot sauce on the side.
