Prepare Sauce

    Make the WO-style sauce

    In a small bowl, combine mayonnaise, ketchup, yellow mustard, sweet pickle relish, apple cider vinegar, and black pepper. Stir until smooth and taste; adjust seasoning, adding hot sauce if using. Refrigerate while assembling sliders.

Prepare Patties & Onions

    Place ground beef in a bowl. Add kosher salt, black pepper, Worcestershire sauce, and garlic powder. Gently mix with your hands until just combined; avoid overworking to keep patties tender.

    Divide the meat into 12 equal portions (about 1.6 oz / 45 g each). Roll lightly into balls and flatten into 2- to 2.5-inch wide thin patties slightly larger than the buns (they will shrink as they cook).

    Heat a large skillet or griddle over medium-high heat and add a thin film of neutral oil. Add the thinly sliced onion and cook, stirring occasionally, until soft and lightly caramelized, about 6–8 minutes. Remove onions from pan and set aside.

Cook Patties & Assemble Sliders

    Return the skillet or griddle to medium-high heat. Working in batches if necessary, place patties on the hot surface and cook until a brown crust forms on the bottom, about 2 minutes.

    Flip each patty and immediately top with a half slice of cheddar (or use small squares so each slider has cheese). Cook another 1.5–2 minutes for medium, or longer to desired doneness.

    If using blue cheese for the WO variation, sprinkle a small amount of crumbles on the patties after flipping in addition to or instead of cheddar.

    Place a spoonful of the cooked onions on each bottom bun, then add a hot cheesed patty, a pickle slice, and a dab (about 1/2 tsp) of the prepared sauce on the top bun. Repeat for all sliders.

Toast Buns & Finish

    Preheat oven broiler or set an oven to 350°F (175°C) if you prefer warming assembled sliders. Brush the insides of the slider buns lightly with softened butter and sprinkle sesame seeds on the tops if desired.

    Option A - Skillet/Griddle: Toast buttered buns, cut-side down, in the skillet for 30–60 seconds until golden. Option B - Oven: Place buttered buns (cut-side up) on a baking sheet and warm in oven for 3–5 minutes until lightly golden.

    Assemble any remaining sliders and serve immediately while patties and cheese are hot. Serve extra sauce on the side for dipping.
