Pat the catfish fillets dry with paper towels. Place fillets in a shallow dish or zip-top bag. Whisk buttermilk with hot sauce (if using), salt, and black pepper, then pour over the fillets making sure they are submerged. Cover and refrigerate for 30 minutes to 2 hours (30–60 minutes is enough for mild flavor; up to 2 hours for more tenderizing).
Atchafalaya-Style Dredge (Cajun cornmeal blend)
While the fish marinates, combine the yellow cornmeal, all-purpose flour, fine corn flour (or extra cornmeal) in a large shallow bowl or rimmed baking sheet. Add paprika, cayenne, garlic powder, onion powder, dried thyme, dried oregano, white pepper, celery salt, and granulated sugar. Whisk thoroughly to make an even, well-spiced dredge.
Set a cooling rack over a tray to rest dredged fillets before frying (helps excess coating fall off and ensures even fry). Prepare a second shallow dish for any leftover buttermilk if you want to double-dip for a thicker crust.
Atchafalaya Relish (quick warm pepper-tomato)
Finely dice the onion, red and green bell peppers, jalapeño (remove seeds for milder), and tomato. Heat 1 tablespoon unsalted butter in a 10-inch skillet over medium heat until foaming.
Season the mixture with 1/2 tsp cajun or creole seasoning, 1/2 tsp salt, 1/4 tsp black pepper, and 1 teaspoon fresh lemon juice. Stir in chopped parsley, remove from heat, and keep warm. Taste and adjust seasoning; set aside while you fry the fish.
Frying and Finish
Pour oil into a heavy-duty skillet or Dutch oven to a depth of about 1 inch (roughly 3–4 cups depending on the pan). Heat oil over medium-high to 360–375°F (182–190°C). If you don’t have a thermometer, test by dropping a pinch of dredge into the oil — it should sizzle and brown in about 30–45 seconds.
Remove one fillet at a time from the buttermilk, letting excess drip back into the dish. Press both sides of the fillet firmly into the dredge mixture to coat well, shaking off any large loose bits. For a thicker crust, dip the coated fillet briefly back into buttermilk and dredge again.
Carefully lay the fillets in the hot oil, do not overcrowd the pan (work in batches of 2 if needed). Fry until the crust is deep golden and fish registers 145°F in the thickest part, about 3–5 minutes per side depending on thickness. Turn once using tongs or a spatula. Adjust heat as needed to keep oil temperature steady.
Transfer fried fillets to a wire rack set over a baking sheet to drain and keep crisp. If desired, dot each fillet with a little finishing butter while hot for gloss and richness.
Spoon warm Atchafalaya relish over or alongside each fillet. Garnish with chopped green onions and serve with lemon wedges for squeezing.
