    Prepare filling

    Remove casings from boudin and place the crumbled sausage into a large mixing bowl. Break up any large clumps so meat and rice are evenly distributed.

    Add the softened cream cheese to the bowl. Using a spatula or your hands, thoroughly mix cream cheese into the boudin until the mixture is cohesive but still slightly textured. Scrape sides of bowl as needed.

    Fold in finely chopped green onion, diced bell pepper, minced parsley, ground black pepper, Cajun seasoning, and optional hot sauce. Taste a small pinch and adjust seasoning (add a little more Cajun seasoning or hot sauce if desired). The mixture should hold together when rolled; if too wet, add 1–2 tablespoons breadcrumbs.

    Cover bowl and refrigerate mixture for 20–30 minutes to firm up. Chilling makes rolling easier and helps maintain shape during frying.

Shaping and Breading

    Set up a breading station: shallow bowl with flour, a second shallow bowl with beaten eggs mixed with 2 tablespoons water or milk, and a third bowl with breadcrumbs combined with the extra 1 tsp Cajun seasoning and optional cornmeal. Stir breadcrumbs to ensure even seasoning.

    Using a small ice cream scoop or tablespoon, portion out about 1.25 ounces (roughly 2 tablespoons) of chilled boudin mixture for each ball to yield uniform 1.5–2 inch balls. Wet your hands if mixture is sticky and roll each portion into a tight ball.

    Roll each ball first in flour, shaking off excess, then dip in the egg wash, letting excess drip off, and finally coat completely in the seasoned breadcrumb mixture. For an extra-crispy coating, double-dip: return the crumbed ball to the egg wash and coat again in breadcrumbs.

    Place breaded balls on a baking sheet in a single layer. Refrigerate 10–15 minutes to help the breading set; this reduces coating loss during frying.

Frying

    Pour oil into a deep heavy-bottomed pot or deep fryer to a depth of 2–3 inches (about 3–4 cups depending on pot size). Heat oil to 350°F (175°C). If you don’t have a thermometer, test with 1 breadcrumb — it should sizzle and brown in about 30–45 seconds.

    Fry the boudin balls in batches, being careful not to overcrowd the pot (6–8 balls per batch depending on pot size). Gently lower balls into hot oil with a slotted spoon or spider. Maintain temperature between 330–360°F; adjust heat as needed.

    Cook for 3–4 minutes, turning occasionally, until exterior is deep golden brown and internal temperature (if checked) reaches at least 165°F (74°C). Larger balls may take an additional minute. Do not overcook — aim for crisp exterior and heated-through interior.

Sauce (Optional)

    While balls fry or rest, whisk together mayonnaise, Creole or Dijon mustard, hot sauce, lemon juice, minced parsley or chives, salt, and black pepper in a small bowl until smooth. Taste and adjust hot sauce, salt, or lemon to balance flavors.
