Prep potatoes
Wash and peel the potatoes if you prefer (peel optional). Cut each potato into even 1/4–1/2-inch thick sticks. Place cut fries in a large bowl of cold water and soak 20–30 minutes to remove excess starch. Drain and pat completely dry with a clean kitchen towel or paper towels.

Cook fries
Option A — Pan-roast/oven: Toss dried fries with 2 tablespoons vegetable oil, spread in a single layer on a baking sheet, sprinkle with 1/2 tsp kosher salt and 1/4 tsp paprika. Roast at 425°F (220°C) for 25–30 minutes, flipping once, until golden and crisp. Option B — Skillet/fry: Heat 2–3 tablespoons oil in a heavy skillet over medium-high heat until shimmering. Add fries in a single layer (work in batches if needed) and cook, stirring occasionally, 10–12 minutes until browned and tender. Drain on paper towels and immediately season with salt.

Keep warm
When fries are done, keep them warm in a low oven (200°F / 95°C) while you finish the sandwich assembly.

Cook bacon
In a cold skillet, lay the bacon strips without overlapping. Cook over medium heat 8–12 minutes, turning occasionally, until crisp to your liking. Transfer to a paper towel–lined plate to drain. Reserve 1 tsp of bacon fat in the pan for eggs (optional) and discard the rest or save for another use.

Fry sunny-side up eggs
Wipe the skillet with a paper towel so only a thin film of reserved bacon fat (or 1/2 tsp oil/butter) remains. Heat over medium-low. Crack 2 eggs into a small bowl (to check for shells), then gently slide into the skillet. Season lightly with 1/4 tsp salt and 1/8 tsp pepper. Cook undisturbed 2–3 minutes until whites are set but yolks remain runny; cover pan for 30–45 seconds if whites are not fully set on top. Do not flip.

Melt cheese on bacon
Place the cooked bacon on the bottom bun, top with American cheese slice while bacon is still hot so cheese softens and melts slightly.

Assemble sandwich
Spread 1 tablespoon mayonnaise on the top bun. On the bottom bun (with bacon and cheese), layer lettuce leaf, tomato slices, red onion slices, and dill pickle slices. Carefully place the sunny-side up eggs on top of the layered ingredients. Add a few dashes of hot sauce if using, then cap with the mayo-spread top bun. Press gently to compact.

Serve
Cut the sandwich in half if desired. Serve immediately with the warm fries. Add extra black pepper to taste.
