Noodle Dough Preparation
1. Mixing the Dough
In a large mixing bowl, combine the all-purpose flour and salt. Gradually add the water while mixing with your hand or a wooden spoon until a shaggy dough forms.
2. Kneading the Dough
Transfer the dough to a floured surface and knead for about 10 minutes until smooth and elastic. Cover with a damp cloth and let it rest for 30 minutes.
Spicy Lamb Sauce Preparation
3. Cooking the Lamb
In a large skillet over medium heat, add the ground lamb and cook until browned, breaking it apart with a spatula, about 5-7 minutes.
4. Adding Flavors
Add the minced garlic, soy sauce, chili oil, and Sichuan peppercorns to the browned lamb. Stir continuously for about 3 minutes until fragrant.
5. Finishing the Sauce
Stir in the chopped green onions and salt to taste. Remove from heat and set aside.

After the dough has rested, roll it out on a floured surface to about 1/4 inch thickness. Cut into strips approximately 1/2 inch wide.
