    Preheat oven and/or oil: If using frozen waffle fries, preheat the oven according to package directions (typically 425°F / 220°C). If making fries from fresh potatoes, heat 2 cups vegetable oil in a deep skillet or fryer to 350°F (175°C).

    Cook fries: For frozen fries, arrange in a single layer on a baking sheet and bake per package instructions until golden and crisp, about 18–25 minutes, flipping halfway through. For fresh fries, fry in batches until deep golden and crisp, 3–5 minutes per batch; drain on paper towels and immediately season with 1 tsp salt and 1/2 tsp black pepper.

    Keep warm: Once cooked, transfer fries to a large oven-safe platter or baking sheet. Keep warm in a low oven (200°F / 95°C) while you prepare the cheese sauce.

Cheese Sauce

    Make a roux

    In a medium saucepan over medium heat, melt 2 tablespoons butter. Sprinkle in 2 tablespoons flour and whisk constantly for 1–2 minutes until the mixture is bubbly and just begins to smell nutty (do not let it brown).

    Add milk

    Slowly pour in 1 cup whole milk while whisking to prevent lumps. Continue to whisk and bring the mixture to a gentle simmer. Cook for 2–3 minutes until it thickens to a smooth, creamy consistency.

    Finish the sauce

    Lower the heat to low and stir in 1 cup grated cheddar and 1/2 cup shredded Monterey Jack a handful at a time, stirring until fully melted and smooth. Add 2 tablespoons softened cream cheese if using, 1/2 teaspoon Dijon mustard, 1/4 teaspoon Worcestershire sauce, 1/2 teaspoon salt, 1/4 teaspoon black pepper, and 1/8 teaspoon cayenne (if using). Taste and adjust seasoning. Keep the sauce warm on the lowest heat, stirring occasionally to prevent skinning.

Assembly & Toppings

    Arrange fries: Remove the warm fries from the oven. If using an oven-safe platter, spread fries into an even layer.

    Pour cheese: Ladle the warm cheese sauce evenly over the fries, using as much as desired to coat and fill the waffle pockets.

    Add bacon and peppers: Sprinkle the chopped cooked bacon evenly over the cheesy fries, then scatter 1/4 cup sliced banana peppers across the top. Add chopped scallions or chives and a pinch (about 1/4 tsp) of freshly ground black pepper.

    Optional finishing: For extra melt and presentation, place the assembled fries under a broiler for 1–2 minutes to bubble the cheese (watch closely to avoid burning). Garnish with chopped parsley if desired.
