Spinach & Artichoke Dip

    Prepare spinach

    Thaw frozen chopped spinach completely (preferably overnight in fridge or microwave). Squeeze out as much moisture as possible using a clean kitchen towel or several layers of paper towels until spinach is very dry — this prevents a watery dip. You should end up with about 3/4 to 1 cup drained spinach.

    Prep artichokes

    Drain and rinse canned artichoke hearts. Chop coarsely into roughly 1/2-inch pieces. Pat lightly to remove excess liquid.

    Mix base

    Preheat oven to 375°F (190°C). In a large mixing bowl, combine the softened cream cheese, sour cream, and mayonnaise. Use a rubber spatula or electric mixer on low speed to smooth until homogenous and creamy.

    Add flavorings

    Stir in the grated Parmesan, shredded mozzarella (reserve the extra 1/2 cup mozzarella for topping if using), minced garlic, lemon juice, kosher salt, black pepper, and crushed red pepper flakes (if using). Mix until evenly distributed.

    Fold in vegetables

    Fold the well-drained spinach and chopped artichoke hearts into the cheese mixture until incorporated. Taste and adjust seasoning with additional salt, pepper, or lemon juice as desired.

    Bake

    Transfer mixture to a 1.5–2-quart oven-safe baking dish (an 8x8-inch or similar works). Smooth the top with a spatula. Drizzle olive oil over the surface if using, and sprinkle the reserved 1/2 cup mozzarella evenly on top. Bake uncovered in the preheated 375°F oven for 20–25 minutes, until the dip is bubbling around the edges and the top is lightly golden.

    Optional broil finish

    For a browned top, switch oven to broil on high for 1–2 minutes, watching carefully to avoid burning, until the cheese bubbles and develops golden brown spots.

    Rest

    Remove from oven and let rest 5 minutes to thicken slightly. If desired, garnish with a light drizzle of olive oil or an extra dusting of Parmesan.

To Serve

    Arrange tortilla chips and optional toasted baguette slices on a serving platter. Serve the dip warm in the baking dish or transfer to a warmed serving bowl. Scoop with chips or bread and enjoy.
