Preparation

Clean and dry
Rinse the whole chicken inside and out and pat thoroughly dry with paper towels. Trim excess fat and pin the wing tips under the back to make a compact shape.

Marinate cavity
Combine 1 tsp salt, 1/2 tsp white pepper, 1 tablespoon light soy sauce and 1 tablespoon Shaoxing wine. Rub this mixture inside the chicken cavity and add half the green onion lengths and half the ginger matchsticks into the cavity. Let sit 20–30 minutes at room temperature (or refrigerate up to 2 hours).

Marinate exterior
In a small bowl combine remaining 1 tsp salt, 1/2 tsp white pepper, 1 tablespoon light soy sauce, 1 tablespoon Shaoxing wine and 1 tsp sesame oil. Rub evenly over the outside of the chicken, lifting skin gently at the breast and spreading some marinade under the skin if possible.

Prepare stuffing
If using dried shiitake, rehydrate in warm water until soft, drain, squeeze and slice. Toss sliced mushrooms, remaining green onion lengths, remaining ginger matchsticks, sliced Chinese sausage (if using), fermented bean curd (mashed into a paste) or substitute miso, and rock sugar together in a bowl. Adjust seasoning with a pinch of salt and a light splash (about 1 tsp) of soy sauce if needed.

Stuff the chicken
Stuff the prepared mixture into the chicken cavity and pack firmly but not tightly so air can circulate. Use kitchen twine to truss the legs together and secure the cavity opening with a skewer if necessary.

Prepare leaves
If using banana or lotus leaves, pass them briefly over an open flame or steam for 1–2 minutes to make them pliable and wipe dry. Lay 2–3 overlapping leaves on a work surface with shiny side down, forming a rectangle larger than the chicken.

Wrap the chicken
Place the chicken in the center of the leaves breast-side up. Fold the leaves snugly around the bird, tucking ends under to form a sealed parcel. Wrap the leaf parcel in aluminum foil to further seal moisture.

Make the clay/dough seal
Mix the all-purpose flour with the coarse salt (if using) and add water gradually to form a smooth, firm dough (like bread/pizza dough). Knead 3–4 minutes, then roll the dough into a sheet large enough to encase the foil-wrapped parcel. Alternatively, use store-bought pizza dough pressed and sealed around parcel.

Seal the parcel
Completely encase the foil-wrapped chicken in the dough, smoothing seams and pinching to seal so no steam escapes. If you like, stamp or score the outer surface for decoration, but keep it sealed. Let rest 10 minutes while you preheat the oven.

Preheat oven to 180°C / 350°F (conventional). Place a rack in the lower third of the oven.

Bake low and slow
Place the sealed parcel on a shallow roasting pan or baking sheet. Bake for 2 to 2.25 hours for a 1.5–2 kg chicken, or until an instant-read thermometer inserted into the thickest part of the thigh (through the dough/foil) reads at least 75°C / 165°F. For a very tender result, you may bake up to 2.5 hours—check after 2 hours to avoid overcooking.

Rest inside parcel
Remove from oven and let rest, fully sealed, for 15–20 minutes. This allows juices to redistribute and makes opening safer.
Unwrapping & finishing

Open carefully
Bring the sealed parcel to the table and carefully crack or cut away the dough outer shell (it will be hard). Remove dough, peel back foil, then carefully unfold the leaves. Steam and hot juices will escape—open away from faces. Transfer the chicken to a cutting board.

Serve
Carve the chicken at the table. Spoon any flavorful juices collected in the foil over slices. Drizzle a little dark soy or mushroom soy if desired and garnish with thinly sliced green onion or cilantro. Serve with steamed rice and pickled vegetables.

All major components in the ingredients are addressed: marinating, stuffing, leaf wrapping, and dough sealing. If you prefer not to use dough, many cooks use a thick mud/clay mix; pizza dough is a safe kitchen substitute. Adjust baking time to chicken size and oven variability.
