Make the roux
Place a large heavy skillet or Dutch oven over medium-low heat. Add the vegetable oil and 4 tablespoons butter. When butter is melted and foam subsides, sprinkle in the 4 tablespoons flour. Stir constantly with a wooden spoon or heatproof spatula, scraping the bottom, for 8–12 minutes until the roux reaches a peanut-butter to light-brown color and smells nutty. Keep the heat low enough to avoid burning—adjust to maintain a steady gentle simmer.
Add the diced onion, bell pepper and celery to the roux. Increase heat slightly to medium and cook, stirring frequently, until vegetables are softened and translucent, about 6–8 minutes.
Liquids & Seasoning
Slowly whisk in the 3 cups chicken stock a ladleful at a time so the roux blends smoothly into the liquid. Once all stock is incorporated, bring the mixture to a gentle simmer.
Whisk in the tomato paste until fully dissolved. Add the Worcestershire sauce, hot sauce, bay leaf, Creole seasoning, kosher salt and black pepper. Stir to combine and reduce heat to low so the etouffee barely simmers. Simmer uncovered for 12–15 minutes, stirring occasionally, to thicken slightly and allow flavors to meld.
Seafood & Finish
Taste the sauce and adjust seasoning as needed (more salt, pepper, or hot sauce to taste). Remove and discard the bay leaf.
Add the crawfish tails to the simmering etouffee and cook just until heated through and opaque, about 3–4 minutes (do not overcook or they will toughen).
Stir in 1 tablespoon butter, the chopped parsley, sliced green onions and the lemon juice. Heat 30 seconds more, then remove from heat. The butter gives a glossy finish and the fresh herbs brighten the dish.
To Serve
Spoon 1 cup cooked hot rice into each serving bowl (recipe yields 4 servings). Ladle the crawfish etouffee over the rice so rice is mostly covered.
Garnish with an extra sprinkle of chopped parsley and sliced green onions, and offer hot sauce at the table. Serve immediately.
