Make a dark roux

In a small heavy-bottomed saucepan set over medium heat, combine 1/4 cup vegetable oil and 1/4 cup all-purpose flour. Stir constantly with a wooden spoon or heatproof spatula. The roux will bubble and darken; continue stirring and watching closely until it reaches a deep peanut-butter to chocolate color, about 12–15 minutes. Reduce heat slightly if it begins to smoke. Remove from heat if it looks like it's burning and let it cool slightly while you prepare the soffritto.

Return the saucepan to medium-low heat. Add the diced onion, green bell pepper, and celery to the roux and stir to coat. Cook, stirring frequently, until the vegetables are softened and translucent, about 4–6 minutes. Add 1 tsp minced garlic and cook 30–45 seconds until fragrant, stirring constantly so the garlic doesn’t burn.

Stir in 1 tablespoon tomato paste and cook 1 minute to deepen flavor. Gradually whisk in 1 1/2 cups low-sodium chicken stock, a few tablespoons at a time to avoid lumps, until the mixture is smooth. Increase heat to bring the gumbo to a gentle simmer.

Proteins & Sausage

Add 1/2 cup shredded cooked chicken and 1/4 cup thinly sliced smoked Andouille or kielbasa to the simmering gumbo. Stir to combine and return to a low simmer. This will warm the proteins and let their flavors meld with the base—simmer gently for 6–8 minutes.

Seasoning & Finish

Season the gumbo with 1/2 tsp Worcestershire sauce, 1/4 tsp dried thyme, 1/4 tsp dried oregano, 1/8 tsp cayenne pepper (adjust for heat preference), 1/2 tsp kosher salt, and 1/4 tsp freshly ground black pepper. Add 1 bay leaf. Taste after 3–4 minutes of simmering and adjust salt or cayenne as needed.

If using, remove the gumbo from heat and stir in 1/8 tsp file powder to lightly thicken and add traditional aroma. Discard the bay leaf before serving.

Place 1/2 cup cooked long-grain white rice into a serving cup. Ladle the hot gumbo over the rice so the total fills approximately one cup serving. Garnish with 1 tsp chopped green onions and 1 tsp chopped fresh parsley. Serve immediately while hot.
