Prepare Patties

Mix

In a medium bowl combine 1 lb ground beef, 1/4 cup fine breadcrumbs, 1 large egg, 1 tbsp Worcestershire sauce, 1 tsp salt and 1/2 tsp black pepper. Gently mix with your hands or a fork until just combined; avoid overworking to keep patties tender.

Form

Divide the mixture into 6 equal portions (about 2.5–3 oz each). Shape each portion into a loose, flat round roughly the diameter of your slider buns (about 2.5–3 inches). Make a slight indentation in the center of each patty with your thumb to prevent doming.

Cook Patties

Pan-fry

Heat a large skillet or griddle over medium-high heat. Add 1 tbsp canola oil and swirl to coat. When shimmering, add the patties (work in batches if needed). Cook 2.5–3 minutes per side for medium, adjusting time for desired doneness. Avoid pressing down on the patties.

Melt Cheese

During the last 30–45 seconds of cooking the second side, place a half American cheese slice (or a piece sized to fit) on each patty and cover the skillet with a lid to trap steam and melt the cheese.

Make Sauce & Prep Toppings

Slider Sauce

In a small bowl whisk together 1/4 cup mayonnaise, 1/4 cup ketchup, and 2 tsp yellow mustard until smooth. Taste and adjust seasoning; set aside.

Prep Onions & Pickles

Thinly slice 1/2 cup yellow onion and measure 1/2 cup dill pickle slices. If you prefer milder onions, soak the slices in cold water for 10 minutes and drain before use.

Assemble & Toast Buns

Butter the Buns

Preheat oven to 350°F (175°C) if making multiple sliders at once. Lightly brush cut sides of 6 slider buns with 2 tbsp melted butter and sprinkle with 1 tsp dried onion flakes and optional sesame seeds.

Toast

Place buns cut-side up on a baking sheet and toast in preheated oven 5–7 minutes, or until edges are lightly golden. Alternatively, toast cut sides briefly on the hot skillet for 1–2 minutes.

Assemble

Spread about 1 tbsp of the prepared sauce on the bottom half of each bun. Place a cheese-topped patty on each bottom bun. Add a few pickle slices and a little of the thinly sliced onion on top of each patty. Spread a light smear of additional sauce on the top bun (optional) and close slider.

Finish & Serve

Arrange sliders on a platter and serve immediately while hot. Offer extra ketchup, mustard, and pickles at the table. Leftover patties can be refrigerated up to 3 days; reheat gently to avoid drying.
