Prepare meat

If using whole alligator meat, trim any fat and sinew and cut into 1/2-inch bite-sized pieces. If using frozen, thaw completely and pat dry with paper towels.

Season the cut alligator pieces with 1/2 tsp kosher salt and 1/4 tsp black pepper and set aside.

Sear

Heat a large skillet over medium-high heat. Add 1 tablespoon neutral oil and 1 tablespoon unsalted butter. When shimmering, add the alligator pieces in a single layer (work in batches if necessary). Sear without moving for about 2 minutes to develop color, then stir and cook another 2–3 minutes until just cooked through (internal temperature ~145°F/63°C for seafood-like texture). Remove to a plate.

Aromatics

Reduce heat to medium and add the remaining 1 tablespoon butter to the skillet. Add the minced garlic and chopped shallot; sauté 1–2 minutes until fragrant and softened, scraping up any browned bits from the pan.

Build the buffalo sauce

Stir in the smoked paprika, ground cumin, and onion powder and cook 30 seconds. Pour in 1/2 cup buffalo-style hot sauce, add 1 tablespoon honey and 1 teaspoon apple cider vinegar, then bring to a gentle simmer.

Return the seared alligator pieces to the skillet and toss to coat in the sauce. Cook 1–2 minutes until the sauce clings to the meat and flavors meld. Taste and adjust seasoning with up to the remaining 1/2 tsp kosher salt and remaining 1/4 tsp black pepper if needed.

Remove from heat and keep warm while you assemble tacos.

Cooling Ranch Slaw

Make slaw

In a medium bowl combine the thinly sliced green cabbage, red cabbage, shredded carrot, and chopped cilantro.

Add 1/2 cup ranch dressing, 1 tablespoon lime juice, and 1 teaspoon hot sauce (optional). Season with 1/4 tsp kosher salt and 1/8 tsp black pepper. Toss until evenly coated. Taste and adjust acidity or seasoning. Chill or hold at cool room temperature while finishing the filling.

Warm tortillas

Heat a dry skillet over medium heat. If desired, brush each tortilla lightly with melted butter and warm 20–30 seconds per side until pliable and slightly toasted. Keep wrapped in a clean towel to stay warm.

Assemble tacos

Place a warmed tortilla on a plate. Add about 2–3 tablespoons of the ranch slaw, then 2–3 ounces (roughly 1/4 cup) of sauced alligator pieces. Sprinkle with blue cheese crumbles and sliced scallions. Drizzle extra hot sauce to taste and finish with a squeeze of lime.

Repeat to make remaining tacos. Serve immediately while filling is warm and slaw is cool for contrast.

Leftover storage: refrigerate gator filling and slaw separately in airtight containers for up to 3 days. Reheat filling gently in a skillet with a splash of water or extra hot sauce to loosen the sauce.
