Rinse and soak

Place the prepared salted jellyfish in a large bowl. Cover with 6 cups of cold water and add 1 cup of ice. Gently agitate the jellyfish with your hands for 1 minute to release surface salt. Drain the water and repeat the cold-water soak 3 times (about 10–15 minutes total soaking time), replacing water each time until the jellyfish tastes mild and not overly salty.

Final rinse and drain

After the last soak, rinse the jellyfish under cold running water for 30–60 seconds. Spread the jellyfish on a wire rack or a tray lined with paper towels and pat dry. If pieces are large, cut into 1/4- to 1/2-inch wide strips. Sprinkle 1 tsp kosher salt evenly and toss briefly to season lightly; set aside in the refrigerator while you prepare the dressing (5–10 minutes).

Dressing

In a small bowl combine 2 tbs light soy sauce, 1 tbs black vinegar, 1 tbs toasted sesame seeds, 1 tsp sesame oil, 1 tsp granulated sugar, 1 tsp white pepper, 1 tsp chili oil (if using), and 1 tbs fresh lime juice. Whisk until sugar is dissolved and ingredients are emulsified. Taste and adjust — it should be savory, slightly tangy and a touch nutty and sweet.

If you prefer a smoother dressing, briefly whisk the minced garlic and julienned ginger into the dressing to mellow their bite and integrate their aroma.

Aromatics & assembly

Prepare vegetables and herbs: thinly slice 1/2 cup cucumber into matchsticks, thinly slice the 2 scallions on the bias (white and green parts separated), chop cilantro leaves, and mince 1 tsp garlic and 1 tbs ginger if not already done.

Combine: In a large bowl place the drained, cut jellyfish strips. Add the cucumber matchsticks, scallion whites, minced garlic, and julienned ginger. Pour about two-thirds of the dressing over the mixture and toss gently to coat. Let sit 3–5 minutes to allow the flavors to marry and the jellyfish to chill.

Finish and garnish: Transfer to a serving plate. Drizzle remaining dressing over top, scatter scallion greens and cilantro leaves, and sprinkle the toasted sesame seeds. Adjust seasoning with additional soy or a pinch of salt if needed. Serve immediately as a chilled appetizer or cold salad.
