Garlic aioli

Make aioli

In a small bowl combine 1 cup mayonnaise, 2 minced garlic cloves, 1 tablespoon lemon juice, 1 teaspoon Dijon mustard and 1 teaspoon olive oil. Whisk until smooth. Season with 1 teaspoon salt and 1 teaspoon black pepper; taste and adjust (add red pepper flakes if using). Refrigerate while preparing the rest so flavors meld.

Cook bacon

Cook 8 slices of bacon in a skillet over medium heat until crisp, about 8–10 minutes, turning occasionally. Transfer to a paper towel–lined plate to drain and cool. When cool, halve each slice crosswise (optional) for easier wrapping.

Slice produce and cheese

While bacon cooks, wash and dry 4 lettuce leaves. Slice 1 tomato into 4 thin rounds. Slice 1 ripe avocado in half, remove pit, peel and slice into 8–10 thin slices. Separate 4 slices of Swiss cheese if stacked.

Warm & assemble wraps

Warm tortillas

Heat a skillet over medium-low and add 1 tablespoon butter or a light coating of oil. Warm each flour tortilla 20–30 seconds per side until pliable and lightly golden. Alternatively, warm in a microwave 10–15 seconds wrapped in a damp towel.

Spread aioli

Lay a warmed tortilla flat. Spread about 2 tablespoons of the prepared garlic aioli evenly over the center of each tortilla, leaving a 1-inch border at the edges to avoid overflow when rolling.

Layer fillings

On top of the aioli, place 3 oz (about 1/4 of the remaining) sliced turkey folded to give height, 1 slice Swiss cheese, 2 slices of tomato, 1 lettuce leaf (torn if too large), 2 halved bacon slices, and 6–8 slices of avocado arranged in a single layer. If you like extra heat, sprinkle a pinch (about 1/8–1/4 tsp) of red pepper flakes on the avocado or aioli.

Roll wrap

Fold the bottom edge up over the filling, fold the sides in toward the center, and roll tightly away from you to form a compact wrap. Place seam-side down on the cutting board to set for 1 minute. Repeat for remaining tortillas and fillings.

Finish & serve

If desired, cut each wrap in half on the diagonal using a sharp knife. Serve immediately with extra garlic aioli on the side for dipping. Makes 4 wraps.
