Prepare aromatics
Peel and thinly slice or mince 4 cloves garlic. Peel and julienne or mince 1 tablespoon fresh ginger. Slice scallions on the bias, keeping whites and greens separate.

Combine 2 tablespoons light soy sauce, 1 tablespoon oyster sauce, 1 teaspoon sugar, 1 teaspoon cornstarch, 3 tablespoons water (or stock), 1 teaspoon sesame oil and 1 tablespoon Shaoxing wine (if using) in a small bowl or measuring cup. Whisk until the cornstarch and sugar dissolve. Taste and adjust: it should be savory-forward with a touch of sweetness.
For stir-frying

Heat the wok
Place a wok or large skillet over high heat until very hot (a bead of water should sizzle and evaporate instantly). Add 2 tablespoons neutral oil and swirl to coat. The oil should shimmer but not smoke heavily.

Cook aromatics briefly
Add the white parts of the scallions, the ginger and the garlic to the hot oil. Stir-fry for about 10–20 seconds until fragrant but not brown. If using red pepper flakes or fresh sliced chili, add them now and toss once.

Stir-fry the greens
Add the prepared greens to the wok in a single layer if possible. Use tongs or a spatula to toss constantly. After 30–45 seconds, add the sauce mixture. Continue to toss and stir for about 1–2 minutes until the greens are bright green, stems are tender-crisp and most of the sauce has thickened and coated the leaves. If the pan gets dry before the greens are cooked, add 1–2 tablespoons water and continue tossing.

Finish and season
When the greens are cooked to your liking (stems tender but with bite, leaves wilted), remove from heat. Sprinkle 1 teaspoon salt evenly (adjust to taste) and 1/4 teaspoon freshly ground black pepper if desired. Toss in the green parts of the scallions and 1 teaspoon sesame oil for fragrance. Give one final toss to combine.

Serve
Transfer to a warm serving plate and serve immediately as a side dish with rice or noodles.
