Prepare prawns
If your prawns are frozen, thaw them completely in the refrigerator or under cold running water. Pat dry thoroughly with paper towels. Place prawns in a medium bowl and season with 1 tsp kosher salt and 1 tsp freshly ground black pepper; toss to coat.

Make marinade
In a small bowl combine 2 tbs olive oil, 2 tbs fresh lemon juice, 2 minced garlic cloves, 1 tsp smoked paprika, 1 tsp red pepper flakes, and 1 tsp honey or maple syrup. Whisk until blended.

Marinate prawns
Pour the marinade over the seasoned prawns and toss until evenly coated. Add 2 tbs chopped fresh parsley and mix. Let sit at room temperature for 10–15 minutes (or refrigerate up to 30 minutes) — do not marinate longer than 30 minutes with citrus or the prawns can become tough.

Heat pan
Place a large skillet or frying pan over medium-high heat. When hot, add the prawns in a single layer. If needed, add a thin film of oil to the pan to prevent sticking.

Cook prawns
Cook prawns 1.5–2 minutes on the first side without moving so they develop color, then flip and cook another 1–2 minutes until opaque and just curled (total cooking time about 3–4 minutes depending on size). Do not overcook.

Finish with butter and lemon
Reduce heat to medium, push prawns to one side of the pan, add 1 tbs unsalted butter and let it melt. Spoon the butter over the prawns for 30 seconds, then remove pan from heat. Squeeze additional lemon wedges over prawns to taste and sprinkle with extra chopped parsley if using.

Serve
Transfer prawns to a warm plate and serve immediately with lemon wedges. Prawns pair well with rice, pasta, a fresh salad, or crusty bread to soak up the buttery juices.
