    Prepare produce

    Wash the baby spinach thoroughly and drain well. Core the apple, remove seeds, and chop into 1-inch pieces (leave the skin on for fiber). Peel the banana and break into chunks. Peel a small knob of fresh ginger and grate until you have about 1 teaspoon.

    Combine base ingredients

    Place the spinach, chopped apple, banana chunks, and grated ginger into the blender jar.

    Add liquids and optional ingredients

    Pour in cold water and almond milk. Add the Greek yogurt if using, the lemon juice, and honey or maple syrup if you prefer a sweeter smoothie. Add 4 ice cubes for chill and texture.

    Blend

    Secure the lid and blend on low for 10–15 seconds to start, then increase to high and blend until completely smooth and vibrant green, about 45–60 seconds total depending on your blender. If the smoothie is too thick, add an additional 2–4 tablespoons of water or milk and pulse until desired consistency is reached.

    Taste and adjust

    Taste the smoothie and adjust: add more lemon for brightness, more ginger for spice (add in 1/4 tsp increments), or a splash more sweetener if desired. Blend briefly to incorporate adjustments.

    Serve

    Pour into two glasses. Garnish each with a few thin apple slices or a sprinkle of grated ginger and a few microgreens if desired.
