Prepare Ingredients
- 1
Wash and chop
Rinse the spinach thoroughly to remove grit. Wash the apple and cucumber. Core the apple and cut into quarters. Peel the cucumber if the skin is thick or waxed, then chop into roughly 1-inch pieces. Cut the fresh pineapple into chunks if not using pre-cut, removing the core; measure 2 packed cups.
- 2
Prep lime and banana
Roll the lime on the counter and squeeze until you have about 2 tablespoons of juice. If using banana, peel it and break into pieces for easier blending.
Blend
- 3
- 4
Pour in 1 cup of cold water or coconut water, the 2 tablespoons of fresh lime juice, and 1 cup of ice. If you want a little extra sweetness, add up to 1 teaspoon of honey or maple syrup.
- 5
Secure the blender lid and blend on medium-high for 45–60 seconds, or until the mixture is completely smooth and bright green. Stop and scrape down the sides with a spatula if needed, then blend another 10–15 seconds.
- 6
Check texture and taste. If too thick, add 2–4 tablespoons more water and pulse to combine. If too tart, add another 1/2–1 teaspoon of sweetener and blend briefly. Adjust lime only if you want more tang—add in 1/2 teaspoon increments.
Serve
- 7
Pour the smoothie into two tall glasses (approximately 12 oz each). Garnish each glass with a lime wedge and a pineapple leaf or small spinach sprig if desired.
- 8
Serve immediately while cold and bright for best flavor and nutrient retention.
