Combine sauce ingredients
In a small bowl, whisk together soy sauce, mirin, rice vinegar, sesame oil, brown sugar (or honey), and crushed red pepper. Stir until the sugar dissolves. Set aside.

Have kosher salt and black pepper measured and ready — you’ll use them while cooking to taste and to draw moisture from the mushrooms.

Sear mushrooms
Heat a large skillet or cast-iron pan over high heat until hot, about 2 minutes. Add the neutral oil and swirl to coat. Add the mushrooms in a single layer (work in two batches if necessary to avoid crowding). Let them cook undisturbed 2–3 minutes so they brown, then stir or flip and cook another 1–2 minutes until golden and edges are crisp. Remove browned mushrooms to a plate and repeat with remaining mushrooms.

Cook aromatics
Reduce heat to medium. Add a drizzle (about 1/2 tbs) of oil to the pan if it looks dry. Add the sliced onion and the sliced scallion whites and sauté 3–4 minutes until softened and translucent. Add the minced garlic and grated ginger and cook 30–45 seconds until fragrant, stirring constantly so they don’t burn.

Combine and sauce
Return the mushrooms to the pan, stir to combine with the aromatics. Pour the prepared sauce over the mushrooms and stir to coat. Cook 1–2 minutes, stirring, until the sauce reduces slightly and glazes the mushrooms. Taste and adjust seasoning: add up to the measured kosher salt if needed and a pinch more black pepper.

Finish
If using, stir in the unsalted butter off the heat to give a glossy finish. Remove pan from heat. Sprinkle toasted sesame seeds and reserved scallion greens on top. Serve immediately with lemon or lime wedges on the side to squeeze over just before eating.
