Preparation Steps
Cook the Fries
Prepare the frozen French fries according to package instructions until they are crispy and golden brown. Set aside.
Make the Sausage Gravy
In a large skillet, melt the butter over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add the pork sausage, breaking it up with a spatula, and cook until browned.
Thicken the Gravy
Sprinkle the flour over the sausage mixture and stir to combine. Cook for about 1 minute. Gradually whisk in the milk, stirring constantly until the gravy thickens. Season with salt and black pepper.
Cook the Eggs
In a separate non-stick skillet, cook the eggs over-easy style until the whites are set but the yolks remain runny.
Assemble the Breakfast Poutine
On a plate, layer the crispy fries, spoon over the sausage gravy, sprinkle with cheese curds, and top with the over-easy egg. Serve immediately.
