Take the T-bone steaks out of the refrigerator and let them rest at room temperature for about 30 minutes before cooking. This helps them cook more evenly.

Generously season both sides of the steak with salt and black pepper. Ensure that the seasoning adheres well to the meat.

Searing the Steak

Heat the olive oil in a large skillet or grill over high heat. Once the oil is shimmering, add the steaks, searing them for 4-5 minutes on each side for medium-rare, depending on the thickness.
