Baking Instructions
Prepare the Oven
Preheat your oven to 425°F (220°C).
Melt Chocolate and Butter
In a medium microwave-safe bowl, combine the unsalted butter and bittersweet chocolate. Microwave in 30-second intervals, stirring after each, until the chocolate and butter are completely melted and smooth.
Mix Sugar and Eggs
In a large mixing bowl, whisk together the granulated sugar, large eggs, and large egg yolks until the mixture is pale and slightly thickened.
Combine Mixtures
Slowly pour the melted chocolate mixture into the egg mixture while whisking continuously until well combined.
Add Dry Ingredients
Sift the all-purpose flour and salt into the chocolate-egg mixture. Gently fold the flour in until just combined. Do not overmix.
Fill Ramekins
Divide the batter evenly among the prepared ramekins, filling each about ¾ full.
Bake
Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes or until the edges are firm but the center is soft.
Cool and Serve
Let the cakes cool for 1 minute, then carefully invert each ramekin onto a plate. Serve immediately with a scoop of vanilla ice cream.
