    Char and roast the eggplants

    Preheat a gas burner to medium-high flame (or preheat a hot grill). Using a fork, prick each eggplant in 4–6 places to prevent bursting. Lightly brush the skins with 2 tablespoons olive oil. Place eggplants directly on the gas flame or on the grill. Rotate every 3–4 minutes until the skin is deeply charred and the flesh collapses and is very soft, about 12–18 minutes total depending on size. Transfer charred eggplants to a bowl and cover tightly with plastic wrap or a lid for 10 minutes to steam — this makes the flesh easier to separate and mellows smoke flavor.

    Remove skins and drain

    Once cool enough to handle, peel away and discard the charred skin (leave a little if desired for smoky flecks). Cut off the stem and scoop the flesh into a fine-mesh sieve or colander set over a bowl. Allow to drain for 10 minutes, pressing gently to remove excess liquid. This prevents a watery salad.

    Combine aromatics and nuts

    While eggplant drains, lightly toast ½ cup walnuts in a dry skillet over medium heat, shaking the pan frequently, 3–4 minutes until fragrant and slightly darker. Remove from heat and roughly chop. Mince or grate 2 garlic cloves finely. In a medium bowl, combine the drained eggplant flesh, chopped walnuts (reserve a tablespoon for garnish if desired), minced garlic, 2 tablespoons fresh lemon juice, 1 teaspoon kosher salt, and 1 teaspoon black pepper.

    Emulsify and adjust seasoning

    Using a fork or a sturdy spoon, mash and fold the mixture until mostly smooth but still slightly chunky — traditional melitzanosalata has texture. While mixing, drizzle in 3 tablespoons extra-virgin olive oil to create a silky emulsion. Taste and adjust with up to 1 teaspoon red wine vinegar or more lemon juice, and additional salt or pepper as needed. Stir in 1 tablespoon chopped parsley if using.

    Finish and store

    Transfer to a serving bowl. Sprinkle reserved chopped walnuts on top and dust with 1 teaspoon smoked paprika if using. Drizzle 1 tablespoon olive oil over the surface for gloss. Chill for 20–30 minutes if you prefer it cool; flavors meld nicely but it can be served at room temperature.

To serve

    Serve melitzanosalata with warm pita or crusty bread. Offer extra lemon wedges and olive oil at the table. Keeps covered in the refrigerator for up to 3 days; bring to room temperature before serving for best flavor.
