Prepare and season cheeses
In a medium mixing bowl, combine ricotta, crumbled feta, and Greek yogurt. Use a spoon or rubber spatula to fold until smooth but slightly rustic — still a little textured. Stir in lemon zest, black pepper, and 1/4 tsp fine sea salt. Taste and adjust seasoning as needed. Transfer the mixture to a shallow serving bowl and smooth the top with the back of a spoon, creating a shallow well in the center for toppings.

Make spiced honey-pomegranate drizzle
In a small bowl, whisk together the honey, pomegranate molasses, lemon juice, ground cinnamon, ground allspice, and red pepper flakes until uniform. If the mixture is too thick to drizzle, add up to 1 tsp warm water and whisk to loosen. Taste and balance acidity and sweetness as desired.

Assemble pomegranate garnish
Fold 2 tablespoons of the pomegranate arils into the spiced honey briefly to coat a few seeds (reserve remaining seeds for sprinkle).

Toast sesame (if not pre-toasted)
If your sesame seeds are raw, warm a small dry skillet over medium heat. Add sesame seeds and toast, stirring frequently, until fragrant and lightly golden (about 2–3 minutes). Remove from heat and let cool slightly.

Seeds & herb oil: Scatter the remaining pomegranate arils across the cheese. Sprinkle the toasted sesame seeds evenly over the top, and spoon the za'atar-olive oil mixture in a thin stream across the cheese.

Garnish: Finish with a light dusting of za'atar if you like more flavor, a pinch of flaky sea salt, and a few twists of freshly cracked black pepper. Add microgreens or parsley for color.

Serve: Place the warm pita or grilled sourdough slices alongside. Encourage guests to spread the cheesy mixture onto bread, getting a bit of honey, pomegranate, and sesame in each bite. Serve immediately.
