Prepare the Rice

In a medium saucepan, combine Carolina Gold rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for about 18-20 minutes or until rice is tender and water is absorbed. Fluff with a fork and set aside.

Cook the Shrimp

In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the shrimp and season with salt, black pepper, and garam masala. Cook for about 3-4 minutes until shrimp are pink and opaque. Remove from skillet and set aside.

Sauté the Vegetables

In the same skillet, add the remaining tablespoon of olive oil. Add the seasonal vegetables and sauté for about 5-7 minutes until tender. Season with salt and pepper to taste.

Poach the Eggs

In a separate pot, bring water to a gentle simmer. Crack the eggs into the simmering water and poach for about 3-4 minutes until the whites are set but yolks are still runny. Remove with a slotted spoon and drain.

Assemble the Dish

In serving bowls, layer the cooked rice, sautéed vegetables, and shrimp. Top each bowl with a poached egg. Garnish with additional garam masala if desired.
