Preparing the Pork Fried Rinds

Clean the Pork Skin

Start by thoroughly cleaning the pork skin under cold running water to remove any impurities.

Boil the Pork Skin

In a large pot, add the cleaned pork skin, cover with water, and bring to a boil. Reduce heat and simmer for about 1 hour until tender.

Dry and Cut

Remove the pork skin from the pot and let it cool. Once cool, cut the skin into bite-sized pieces.

Fry the Pork Rinds

In a deep pan, heat the vegetable oil to 180°C (350°F). Fry the pork pieces in batches until they puff up and turn golden brown, about 2-3 minutes. Remove and drain on paper towels, then sprinkle with salt.

Peel and Cut the Yuca

Peel the yuca root and cut it into 1-inch thick pieces.

Boil the Yuca

In a large pot, add the yuca pieces and cover with water. Add salt and bring to a boil. Cook for about 20-25 minutes until tender.

Drain the yuca and let it cool slightly before frying.

In the same deep pan used for the pork rinds, heat the vegetable oil to 180°C (350°F). Fry the boiled yuca pieces in batches until golden brown and crispy, about 4-5 minutes. Remove and drain on paper towels, then sprinkle with salt.
