Preparing the Beef

Cook the Beef

In a large pot, heat olive oil over medium heat. Add chopped onion and minced garlic, sautéing until softened. Season the beef with salt, pepper, cumin, and paprika. Add the beef to the pot and brown on all sides.

Simmer

Pour in the beef broth and bring to a simmer. Cover the pot and reduce heat to low. Cook for about 3 hours, until the beef is tender and shreds easily.

Shred the Beef

Remove the beef from the pot and let it cool slightly. Shred the beef with two forks and return to the pot with the broth. Stir to combine.

Mix the Dough

In a large bowl, combine pre-cooked cornmeal, salt, and water. Mix until a soft dough forms. Let it rest for about 5 minutes.

Shape the Arepas

Divide the dough into 8 equal portions. Roll each portion into a ball and then flatten it into a disc about ½ inch thick.

Heat a skillet over medium heat and add butter. Cook the arepas for about 5 minutes on each side until golden brown and crispy.
