Chocolate Sponge Cake

Preheat and prepare pan

Preheat oven to 350°F (175°C). Grease and line an 8x8-inch square cake pan with parchment leaving an overhang for easy removal.

Sift together the flour, cocoa powder, baking powder, and salt into a medium bowl; set aside.

In a large heatproof bowl, whisk the eggs and granulated sugar. Place over a pot of simmering water (double boiler) and whisk constantly until warm to the touch and sugar dissolves, about 3–4 minutes. Remove from heat and whisk with an electric mixer on high until tripled in volume and pale, about 5–7 minutes (ribbon stage).

Fold in the dry ingredients in two additions using a rubber spatula, being careful not to deflate the batter. Gently fold in the milk, melted butter, and vanilla until just combined.

Pour batter into the prepared pan, smooth the top, and bake 20–25 minutes until a toothpick comes out with a few moist crumbs. Do not overbake — sponge should be tender.

Let cool in pan 10 minutes, then use parchment overhang to lift onto a wire rack. While still slightly warm, poke the top all over with a skewer or fork to allow the soak to penetrate.

Tres Leches Soak

Whisk together evaporated milk, sweetened condensed milk, and heavy cream in a bowl until smooth. Stir in chocolate liqueur if using.

Slowly pour the milk mixture evenly over the warm but not piping-hot cake, about half first to let it absorb, then the rest. Use a spatula to gently press so the liquid soaks in. Chill the soaked cake in the refrigerator at least 2 hours, preferably 4 hours or overnight for best texture.

Mint-Basil Syrup

Combine water and sugar in a small saucepan and bring to a simmer over medium heat, stirring until sugar dissolves.

Add mint leaves, basil leaves, and lime zest. Remove from heat, cover, and steep 15 minutes for a bright herbal infusion.

Strain syrup through a fine-mesh sieve and discard solids. Let syrup cool. Reserve 2–3 tablespoons for serving and 1–2 tablespoons to brush on the cake surface just before glazing (optional). Store extra syrup refrigerated up to 5 days.

In a chilled mixing bowl, whip the 1.5 cups heavy cream to soft peaks with an electric mixer.

Gently fold in the sweetened condensed milk, cocoa powder, and vanilla until uniformly chocolate and smooth, taking care not to deflate whipped cream too much.

Fold in crushed chocolate sandwich cookies and chopped dark chocolate. Transfer mixture to a loaf pan or small freezer-safe container, cover tightly, and freeze at least 6 hours or overnight until scoopable.

Chocolate Glaze & Assembly

Place chopped semisweet chocolate in a heatproof bowl. Heat the 1/4 cup heavy cream and butter in a small saucepan just until it begins to simmer, then pour over the chocolate. Let sit 1 minute, then whisk until smooth and glossy. Cool slightly until the glaze thickens but is still pourable.

If desired, brush the top of the chilled tres leches cake lightly with 1–2 tablespoons of the mint-basil syrup to heighten herbal notes and help glaze adhere.

Pour the chocolate glaze over the center of the cake and spread gently to the edges so it drips a little down the sides. Return cake to refrigerator for 15–20 minutes to set glaze.

Scoop chilled chocolate cookie ice cream into small quenelles or scoops. Place 1–2 scoops on or beside each slice at plating.

Sprinkle a light pinch (about 1/8–1/4 tsp per slice) of black sea salt flakes over the glazed cake just before serving to accentuate chocolate. Garnish with small mint leaves.
