Prepare and cut

Preheat the oven to 425°F (220°C). Wash and scrub the whole sweet potatoes well. Peel them if you prefer (peeling is optional). Cut each sweet potato into evenly sized fries about 1/3 to 1/2 inch thick. Aim for uniform size so they cook evenly. Pat the cut fries very dry with a clean kitchen towel or paper towels — removing surface moisture helps them crisp.

Toss with cornstarch

Transfer the dried fries to a large bowl. Sprinkle the cornstarch over the fries and toss them gently until they are lightly and evenly coated. The cornstarch creates a thin dry layer that promotes a crisp exterior.

Season and oil

Add the olive oil, salt, black pepper, smoked paprika, garlic powder, and cayenne (if using) to the bowl with the fries. Toss thoroughly so each fry is evenly coated with oil and seasoning. If you need more oil to coat evenly, add up to 1 additional teaspoon.

Arrange on baking sheet

Line a large rimmed baking sheet with parchment paper or lightly grease it. Spread the fries in a single layer on the sheet with space between pieces; overcrowding will produce steam instead of crisping. Use two sheets if necessary to avoid overlap.

Bake

Bake in the preheated oven for 12 minutes. After 12 minutes, remove the sheet and use a spatula to flip each fry or rotate the pan so fries brown evenly. Return to the oven and bake another 10–12 minutes, or until edges are browned and fries are tender inside. Total bake time will be about 22–24 minutes depending on thickness and your oven.

Increase crispness (optional)

If you want extra crispness, broil for 1–2 minutes at the end of baking, watching very carefully to prevent burning. Alternatively, increase oven temperature to 450°F (230°C) for the last 3–5 minutes, checking frequently.

Finish and serve

Remove fries from the oven and immediately sprinkle with additional salt to taste and the chopped fresh parsley if using. Serve hot with lemon wedges on the side for a bright finish. Recommended accompaniments: ketchup, aioli, or your favorite dipping sauce.
