Prep strawberries

Rinse the strawberries under cold water, remove the green caps, and pat dry. If berries are large, quarter them so they blend evenly.

Cook gently (optional for smoother, brighter flavor)

Place the prepared strawberries, 1 tablespoon sugar, 1 teaspoon lemon juice, and 2 tablespoons water in a small saucepan. Warm over medium-low heat just until the strawberries release juices and the sugar dissolves, about 3–4 minutes. Do not boil vigorously; you want gentle simmering. This step reduces raw edge and dissolves sugar quickly. Remove from heat and cool 5 minutes.

Blend and strain

Transfer the warm (or raw, if you skipped heating) strawberries and their juices to a blender. Puree until smooth, about 20–30 seconds. For an ultra-smooth milk, press the purée through a fine-mesh sieve into a bowl using the back of a spoon to remove seeds and coarse bits. You should end up with about 3/4 to 1 cup of purée. Taste and add up to 1/2 tablespoon more sugar if needed.

Chill the purée if you warmed it; let it cool to room temperature or refrigerate 10–15 minutes so it doesn’t warm the milk.

Flavor the milk

Combine 2 cups of cold whole milk and 1 teaspoon vanilla extract in a pitcher. Stir gently to mix but avoid frothing.

Sweeten (if desired)

If you prefer sweeter milk, dissolve additional 1–2 teaspoons sugar in a tablespoon of warm water and stir into the milk. This recipe assumes most sweetness comes from the strawberry purée.

Combine purée and milk

Pour 3/4 to 1 cup strawberry purée into the pitcher with milk. Stir gently until evenly colored and combined. Taste and adjust: add more purée for stronger strawberry flavor or more milk to mellow it.

If you want the drink chilled and slightly diluted, add 4 ice cubes to each serving glass just before pouring.

Assemble & Serve

Divide ice (if using) among two tall glasses. Pour the strawberry milk mixture evenly into the glasses.

Garnish each glass with a sliced strawberry and a dollop (about 1 tablespoon) of whipped cream if desired. Serve immediately.

Leftover purée: store in an airtight container in the refrigerator for up to 3 days; stir before using. Mixed strawberry milk is best consumed immediately but can be refrigerated up to 24 hours; shake or stir before serving.
