Prepare strawberries

Wash the strawberries thoroughly under cold running water. Hull them by removing the green caps and any bruised parts. Measure 3 cups of hulled strawberries and set aside.

Sweeten (if using granulated sugar)

Place the hulled strawberries in a heatproof bowl or measuring cup and sprinkle the 3 tablespoons of granulated sugar over them. Let sit 5–10 minutes to macerate (the sugar will draw juices and soften the berries). This step speeds extraction of flavor but can be skipped or replaced with a simple syrup for a smoother result.

Blend

Transfer the macerated strawberries (including any juices) to a blender. Add 2 cups cold water and 2 teaspoons fresh lemon juice. Blend on high until the mixture is very smooth, about 45–60 seconds. If you prefer a stronger, thicker juice, reduce the water to 1 cup; for a lighter juice, increase water up to 3 cups.

Strain (optional)

For a smooth, pulp-free juice, pour the blended mixture through a fine-mesh sieve or cheesecloth into a pitcher, pressing the solids with the back of a spoon to extract as much liquid as possible. If you prefer a pulpy, smoothie-like texture, skip this step and keep the blended mixture as-is.

Adjust sweetness and chill

Taste the strained or unstrained juice. If it needs more sweetness, dissolve an additional 1 tablespoon sugar in a little warm water and stir into the juice, or add simple syrup to taste. If the juice is too concentrated, add a bit more cold water. Refrigerate until well chilled, about 15–30 minutes, or serve immediately over ice.

Serve

Fill glasses with ice cubes (about 1/4 to 1/2 cup ice per glass). Pour the chilled strawberry juice into glasses. If you like a fizzy drink, top each glass with about 1/4 cup sparkling water or club soda and gently stir once. Garnish with a fresh strawberry slice and a mint leaf, if desired.

Storage

Store any leftover juice in a covered pitcher or airtight container in the refrigerator for up to 2 days. Stir or shake before serving, as separation may occur.
