Boil water

Bring 3 cups of water to a boil in a kettle or small saucepan.

Steep green tea

Remove from heat and let water sit 30 seconds to 1 minute to cool slightly (ideal ~175–185°F / 80–85°C). Add 2 green tea bags (or 2 tablespoons loose leaf in an infuser). Steep for 2–3 minutes for a light, not bitter brew. Taste after 2 minutes and remove tea if strength is sufficient.

Sweeten while warm

Stir 2 tablespoons granulated sugar (or equivalent honey/simple syrup) into the warm tea until dissolved. Allow the sweetened tea to cool to room temperature, then chill in the refrigerator if time allows (about 20–30 minutes) or proceed with ice for immediate service.

Cook strawberries

Place 1 cup hulled and quartered strawberries, 2 tablespoons water, and 1 tablespoon granulated sugar into a small saucepan over medium heat. Cook, stirring occasionally, until the strawberries break down and the mixture becomes saucy, about 5–7 minutes.

Mash and finish

Use the back of a spoon or a potato masher to mash the strawberries to your preferred consistency (smooth or slightly chunky). Stir in 1 teaspoon fresh lemon juice to brighten the flavor. Remove from heat and let cool to room temperature.

Optional strain

For a smoother syrup, press the mixture through a fine-mesh sieve into a bowl, discarding seeds and pulp. For a rustic puree, use as-is.

Assembly & garnish

Fill two serving glasses with ice (use about 1/2 cup ice per glass).

Divide the cooled green tea between the two glasses (about 1 1/2 cups tea total, ~3/4 cup per glass). If the tea is very concentrated, dilute with the additional 1 cup cold water or chilled tea to taste before pouring.

Spoon or pour the strawberry syrup/puree into the glasses: about 2–3 tablespoons per glass (use the full batch across both glasses as preferred). Stir gently to combine; the drink will have a pink gradient if not fully mixed.

Taste and adjust sweetness: add more sugar or simple syrup if needed, stirring until dissolved.

Garnish each glass with fresh strawberry slices and 2 mint leaves. Serve immediately with a straw or stirrer.
