Prep scallions and eggs

Wash scallions. Trim root ends and any wilted tops. Thinly slice scallions, keeping white and green parts slightly separated (whites provide flavor base; greens are for folding and garnish). Crack the 3 eggs into a medium mixing bowl.

Add 2 tablespoons milk to the eggs (this loosens the texture) and season with 1 teaspoon kosher salt and 1 teaspoon freshly ground black pepper. Whisk vigorously until fully combined and slightly frothy (about 20–30 seconds). This incorporates air for a tender omelet.

Heat the pan

Place a 8–10 inch nonstick or well-seasoned skillet over medium heat. Add 1 teaspoon neutral oil and swirl to coat. When the oil shimmers (about 30–45 seconds), add 1 tablespoon unsalted butter and let it melt, tilting the pan so the butter coats the surface.

Cook scallion whites

Add the thinly sliced scallion whites to the skillet and sauté for 30–45 seconds until fragrant and slightly softened but not browned. This mellows their sharpness and releases aroma into the fat.

Pour eggs and create set

Pour the beaten eggs evenly into the skillet over the scallions. Immediately reduce heat to medium-low. Using a spatula, gently pull the cooked edges toward the center while tilting the pan so uncooked egg flows to the edges. Continue this motion until the surface is mostly set but still slightly glossy (about 1–2 minutes).

Add scallion greens

Sprinkle the reserved sliced scallion greens evenly over the top of the partially set eggs. If using, add any optional fillings (small amount of grated cheese, cooked mushrooms, etc.) at this point.

Use the spatula to fold one side of the omelet over the other (or fold in thirds), forming a half-moon or roll. Let the folded omelet cook for another 20–30 seconds to finish cooking through but remain tender. Avoid overcooking; the interior should be soft but not runny.

Optional garnish / finishing

Transfer the omelet to a warm plate. Drizzle 1 teaspoon light soy sauce and 1/2 teaspoon toasted sesame oil over the top if desired, or serve them on the side. Sprinkle additional sliced scallions or chopped cilantro and a pinch (1/4 tsp) of chili flakes or a few drops of hot sauce to taste.

Serve immediately while hot with crusty bread, steamed rice, or as part of a breakfast spread. Clean skillet while still warm for easier washing.
