Brew Tea

Bring 4 cups of water to a near-boil (about 175°F/80°C for green tea or 200°F/93°C for black tea). Remove from heat, add tea (2 tsp loose leaf or 2 tea bags), and steep: 2–3 minutes for green tea or 3–5 minutes for black tea to avoid bitterness. Strain leaves or remove tea bags.

Let the brewed tea cool at room temperature for 15–20 minutes, then chill in the refrigerator until cold (about 30 minutes) or pour over the 2 cups of ice to speed cooling.

Peach Syrup

Prepare Peaches

While the tea cools, peel and pit the peaches. Chop into roughly 1-inch pieces to yield about 2 cups.

Cook Syrup

Combine 1 cup sugar, 1 cup water, and the chopped peaches in a small saucepan. Bring to a gentle boil over medium heat, then reduce heat and simmer 8–10 minutes, stirring occasionally, until peaches are very soft and sugar is dissolved.

Blend & Strain

Carefully transfer the peach mixture to a blender and puree until smooth (or mash thoroughly for a chunkier syrup). For a clear syrup, strain the puree through a fine-mesh sieve into a bowl, pressing to extract as much liquid as possible. Stir in 1 tablespoon fresh lemon juice to brighten flavor. Allow the syrup to cool to room temperature, then refrigerate until cold.

Assemble Drink

In a large pitcher, combine the chilled brewed tea (about 4 cups) and the cooled peach syrup. Start by adding 1/2 to 3/4 cup peach syrup, taste, and adjust sweetness/peach intensity. Add up to 2 cups cold water or additional chilled tea if you prefer a lighter flavor. Add the 2 cups of ice to the pitcher or fill individual glasses with ice.

Serve

Pour the peach green tea into glasses over ice. Garnish each glass with fresh peach slices and 2–3 mint leaves. Stir lightly before serving. Store any leftover syrup in the refrigerator for up to 7 days; brewed tea will keep chilled for 2–3 days.
