Tea base
Bring water to temperature
Pour 4 cups of water into a kettle and heat to just under boiling, about 175–185°F (80–85°C). If you don't have a thermometer, bring to a simmer and remove from heat immediately.
Steep the green tea
Place 2 teaspoons loose green tea (or 2 green tea bags) in a heatproof teapot or pitcher. Pour the hot water over the tea and steep for 2–3 minutes for a bright, slightly astringent flavor. Do not steep longer or it will become bitter.
Sweeten (optional) and cool
If using honey, stir 2 tablespoons into the hot tea until dissolved. Allow the tea to cool to room temperature (~20–30 minutes) then chill in the refrigerator until cold (about 30–45 minutes) or proceed with ice for immediate service.
Passion fruit syrup
Combine ingredients
In a small saucepan, combine 1 cup passion fruit pulp, 1 cup granulated sugar, and 1 cup water. Stir to combine.
Simmer to make syrup
Place saucepan over medium heat. Bring mixture to a gentle boil, stirring occasionally. Reduce heat to low and simmer for 6–8 minutes until slightly thickened and syrupy. Skim off any foam with a spoon.
Add lime and cool
Remove syrup from heat, stir in 1 tablespoon fresh lime juice, and let cool to room temperature. Strain through a fine mesh sieve if you prefer a smooth syrup (this removes most seeds) and reserve 2 tablespoons of pulp/seeds for garnish if desired. Chill until ready to use.
To serve
Assemble iced Passion Fruit Green Tea
Fill two serving glasses with ice (about 1 cup ice per glass). Divide the chilled green tea between the glasses (about 1.5 cups tea per glass). Add passion fruit syrup: 2–3 tablespoons syrup per glass for medium sweetness and bright flavor (adjust to taste). Stir gently to combine.
Garnish and finish
Top each glass with about 1 tablespoon reserved passion fruit pulp/seeds, add a few mint leaves for aroma if using, and a small wedge of lime if desired. Taste and adjust sweetness by adding more syrup or honey dissolved in a teaspoon of warm tea.
Serve
Serve immediately as a refreshing iced beverage. Syrup will keep refrigerated in a sealed container for up to 10 days; brewed tea keeps chilled for 48 hours.
