Fillo Layers

Preheat and prepare

Preheat oven to 375°F (190°C). Line two baking sheets with parchment paper.

Place one fillo sheet on a clean work surface. Keep remaining sheets covered with a slightly damp towel to prevent drying.

Brush the sheet lightly with melted butter. Lightly sprinkle with a scant pinch of granulated sugar. Place another sheet on top and repeat until you have 6 layered sheets per baking sheet (total 12 sheets used as 6 tri-layers) — aim for sets of 3–4 stacked sheets so you will produce multiple crisp layers. For a Mil Hojas, you want extremely crisp thin biscuits, so keep layers thin.

Cut stacks into rectangles approximately 3x6 inches (or desired cake layer size). Transfer carefully to prepared baking sheets, leaving space between pieces.

Brush tops with remaining melted butter and sprinkle lightly with the remaining sugar.

Bake for 8–12 minutes, rotating halfway, until golden brown and crisp. Watch carefully as fillo can brown quickly. Remove and cool on a rack. Repeat with any remaining sheets if needed.

Guava Pastry Cream

If using guava paste: chop the paste and warm it with 1/2 cup milk in a small saucepan over low heat, stirring until it dissolves into a smooth purée. If using guava purée, combine directly with milk. Strain if you want a very smooth cream.

In a medium saucepan, combine the remaining 1.5 cups milk and the guava-milk mixture. Heat over medium until just simmering and small bubbles form at the edge, then remove from heat.

In a bowl, whisk together the egg yolks, granulated sugar, cornstarch and salt until pale and smooth.

Tempera the yolks by slowly whisking about 1/3 cup of the hot milk mixture into the yolk mixture to raise its temperature, then gradually whisk the warmed yolks back into the saucepan.

Return the saucepan to medium heat and cook, whisking constantly, until the mixture thickens and comes to a gentle boil — about 1–2 minutes. Continue cooking for 30–60 seconds once it thickens to fully activate the cornstarch.

Remove from heat and whisk in the butter and vanilla until smooth. Taste and adjust for guava sweetness — if more fruit flavor is desired, fold in an additional 1–2 tablespoons of guava purée cooled to room temperature.

Pour the pastry cream into a shallow bowl, press plastic film directly onto the surface to prevent a skin, and chill until fully cold, at least 2 hours.

Passion Fruit Coulis

Combine passion fruit pulp, sugar, water and lemon juice in a small saucepan. Heat gently over medium, stirring until sugar dissolves. Bring to a gentle simmer for 2–3 minutes to slightly reduce and thicken — remember the seeds provide texture; if you prefer a smoother coulis, pass the mixture through a fine mesh sieve and reserve.

Cool the coulis to room temperature, then chill until assembly. If too thick after chilling, whisk in a tablespoon of water to loosen to a pourable sauce consistency.

Almond Strudel Crumbs

Preheat oven to 350°F (175°C) if not still warm from fillo baking. On a baking sheet, rub the cold butter into the flour, almond flour, sugar and salt using your fingertips or a pastry cutter until coarse crumbs form. Spread into a thin layer.

Bake for 8–12 minutes, stirring once, until golden and crisp. Remove and cool completely; break into fine crumbs with a food processor or by pulsing briefly. Reserve for assembly.

Assembly & Finish

Prepare components: have 6–8 crisp fillo rectangles (3–4 per layer depending on stack method) cooled, chilled guava pastry cream, passion fruit coulis chilled, and almond crumbs ready.

If you baked individual small rectangles, assemble Mil Hojas by spreading a thin, even layer (about 3–4 tbs) of guava pastry cream on one fillo piece, sprinkle a light dusting of almond strudel crumbs, and place another fillo on top. Repeat to build 3–5 layers high depending on desired height, finishing with a fillo piece on top. For a multi-piece cake, assemble stacked rows and press gently to set.

Spoon or pipe small amounts of passion fruit coulis between some layers or dot on top for bright acidity — about 1 tbsp per layer where used. Avoid oversaturating so fillo remains crisp.

Dust the top lightly with powdered sugar and sprinkle with toasted sliced almonds if using.

Chill assembled Mil Hojas for 30–45 minutes to let layers settle but serve within 4 hours for best crispness. The pastry will soften over time from the cream filling.
